This recipe tends to be on weekly dinner rotation at my house because they’re super easy to make and you get a healthy dose of veggies as well! While I usually vary the spice mix on the cauliflower, the one I tend to gravitate to often is ras el hanout, a Moroccan spice blend consisting of cinnamon, allspice, cumin, coriander and a few other spices. It does vary from vendor to vendor, but my favorite is the one from SpiceWalla, one of my favorite spice companies. These cauliflower tacos get a nice tangy kick from the pickled onions, but any pickled vegetable will work here. I like adding a few pepitas to my taco for a bit of crunch.
